Sauternes
The Sauternes wine subregion (Bordeaux wine region) includes five communes: Barsac, Sauternes, Bommes, Fargues, and Preignac. All these communes are allowed to use the Sauternes name, and the commune of Barsac is also permitted to label its wines as 'Barsac.'
Sauternes wines are renowned for their sweetness and are made from Sémillon, Sauvignon Blanc, and Muscadelle grapes. Almost every year, the grapes are affected by Botrytis cinerea, turning the berries into raisins and achieving high sugar content at harvest. During fermentation, after reaching the appropriate alcohol level, the process is stopped, resulting in wines with high residual sugar.
